Green Gazpacho

2 cups diced honeydew melon
1 English (seedless) cucumber, peeled and diced
1 small onion, diced
1 avocado - peeled, pitted, and chopped
1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic, chopped
1/4 cup white balsamic vinegar
1 tablespoon lime juice
salt and freshly ground black pepper to taste

Combine all  ingredients in blender & blend until smooth

Alterations for after a throat surgery:

Omit onion, jalapeno, & lime juice
Replace vinegar with dairy-free milk

Homemade Worcestershire Sauce

1/2 c apple cider vinegar
2 T Thai fish sauce
2 T honey
1 T molasses
1/2 t ground clove
1/2 t onion powder, or 2 T finely chopped  fresh onion
2 cloves garlic, finely chopped
1/4 t mustard powder
1/4 t ground ginger, or 1 drop dōTERRA Ginger oil

Oatmeal Protein Bars

Ingredients:
2 c cooked gluten-free oatmeal (cooked with cinnamon)
2 c cooked quinoa
1 c almond butter
1-1 1/2 c goat's milk or dairy-free milk
1 cup shredded, unsweetened coconut
1 c pitted prunes
1/2 tablespoon almond extract (optional)
1 T vanilla extract (optional)

Directions:
Preheat the oven to 375. Grease a 9 x 13 baking dish.Put the oatmeal in the bowl of a stand mixer fitted with a paddle attachment. Stir on low until smooth and clump-free. With the mixer on low,  Add in the rest of the ingredients and mix until thoroughly combined.Pour the mixture into the prepared pan and bake for 45 minutes, until the center is set but still jiggles a bit when the pan moves.Serve warm on it’s own, or topped with lightly sweetened whipped cream or Greek yogurt, and fruit.

Homemade Cough Syrup

Juice of 3 lemons  (about 3/8 c)
1/4 c raw honey
1/2 c raspberry leaf tea
20 drops dōTERRA Lemon or OnGuard essential oil (get it here)

Gluten-free Waffles

2 2⁄3 c Namaste gluten-free flour
1 1⁄3 c millet flour
12 t baking powder
1⁄2 t salt
6 eggs, separated
1 1⁄2 c butter, melted (or dairy-free butter substitute)
5 1⁄4 c goat's milk or dairy-free milk substitute

DIRECTIONS
In a large mixing bowl, whisk together all dry ingredients.
Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
Beat whites until moderately stiff; set aside.
Add milk and melted butter to dry ingredient mixture and blend.
Fold stiff egg whites into mixture.
Ladle mixture into hot waffle iron and bake.
